One of the most common first-timer mistakes is ordering too many unfamiliar ingredients at once. A serious hot pot menu can have 80+ items — and some require timing, technique, or an acquired taste. Here are the ten safest, most delicious starting points.

1. Thinly Sliced Beef (肥牛片)

The most universally loved hot pot ingredient. Cooks in 15–30 seconds. Watch for the color change from pink to brown and pull immediately. Impossible to ruin if you pull it on time.

2. Large Shrimp (大虾)

Forgiving and visually obvious when done — curls into a C-shape and turns pink-orange. Takes 2–3 minutes.

3. Fish Balls (鱼丸)

Pre-cooked, so you are just heating through (2–3 minutes). They float when ready. Mild, springy, completely safe.

4. Enoki Mushrooms (金针菇)

Add at the very start — 30–45 seconds and their flavor enriches the broth. Grab them quickly; they go limp fast.

5. Napa Cabbage (白菜)

The ultimate mild vegetable. Leaves: 1–2 minutes; stems: 3–4 minutes. Absorbs broth beautifully. Endless and forgiving.

6. Firm Tofu (老豆腐)

Cut into 2cm cubes, needs 3–4 minutes. Holds its shape, absorbs broth, acts as a palate cleanser.

7. Beef Meatballs (牛肉丸)

Bouncy and practically impossible to overcook. Pre-cooked, need 2–4 minutes to heat. The Chaoshan hand-beaten version is a must-try.

8. Lamb Slices (羊肉卷)

Incredible if you enjoy lamb. Same timing as beef: 15–30 seconds. Classic in Beijing copper-pot style.

9. Frozen Tofu (冻豆腐)

Freeze-thaw creates a honeycomb that absorbs broth like a sponge. Takes 4–5 minutes but every bite is packed with flavor. Prepare the night before.

10. Glass Noodles (红薯粉)

Save for the end — add to concentrated broth, let soak 2–3 minutes. The most satisfying final course.
