The Rule of Hot Pot Sauces

In China, hot pot sauce is deeply personal. Walk into any hot pot restaurant and you'll find a self-serve sauce station with 20+ condiments — each diner builds their own combination. The recipes below are proven classics, but treat them as starting points. There is no wrong answer.

Classic Sesame Sha Cha Sauce

芝麻沙茶酱

The most universal hot pot sauce — works with everything. Creamy, savory, with a warm sesame backbone and an umami punch from sha cha.

Best with: Beef, lamb, mushrooms, vegetables

Sha cha sauce (沙茶酱) 1 tbsp
Soy sauce 2 tsp

Sha Cha Peanut Sauce

沙茶花生酱

Richer and nuttier than the classic, with peanut butter adding depth and body. Great for dipping tofu and delicate seafood.

For pure sesame lovers. Thick, coating, and richly savory. This sauce clings to vegetables and tofu skin, making every bite deeply flavored.
