That buzzing, tingling, pins-and-needles feeling from Sichuan peppercorns is not "spicy" — it is a completely separate neurological event caused by a compound called sanshool. Understanding it changes how you experience hot pot forever.

🌶️ vs ⚡ — Two Completely Different Sensations

When most people hear "hot pot is spicy," they imagine one sensation. But Sichuan-style hot pot actually involves two distinct, simultaneous sensations that engage different nerve pathways:

🌶️ La (辣) — Chili Heat

The Chinese word 麻辣 (MaLa) literally encodes this distinction: Ma (麻) = numbing, La (辣) = spicy. Every description of Chongqing hot pot as "麻辣" is telling you it contains both sensations — not one single "spiciness."

🔬 What Is Sanshool?

Sichuan peppercorns (花椒, Zanthoxylum bungeanum or Z. simulans) contain a family of alkylamide compounds called sanshools. The most potent is hydroxy-α-sanshool (HαS).

When sanshool contacts the mucous membranes of your mouth and lips, it triggers a cascade of events:

  1. TRPV1 and TRPA1 activation: These thermosensory channels are also activated by capsaicin (hot) and mustard oil respectively, but sanshool stimulates them in a different pattern — producing low-frequency oscillations rather than sustained pain signals.
  2. Two-pore potassium channel (K2P) inhibition: K2P channels normally keep neurons in a resting state. Sanshool blocks them — specifically KCNK3, KCNK9 and TRAAK channels — causing neurons to fire more readily. This is why the numbing paradoxically produces increased sensory activity, not silence.

🍲 Practical Implications for Hot Pot

Understanding Ma vs La changes how you experience and approach hot pot:

  • Ma can buffer La: At certain concentrations, the sanshool-induced neural activity can actually reduce perceived capsaicin intensity. This is why experienced eaters of Chongqing hot pot often say "the numbing makes the spicy bearable." The Ma does not reduce capsaicin — it changes how your nervous system processes the combined input.
  • Ma builds up gradually: Unlike capsaicin which hits quickly, sanshool accumulates. After 30–60 seconds of contact, the tingling intensifies. This is why a broth that "doesn't seem that ma at first" intensifies as the meal progresses.
  • Ma is not cleared by dairy: Capsaicin is fat-soluble and is neutralized by casein proteins in milk. Sanshool works through ion channel blocking — dairy has no effect on it. If Ma is bothering you, more broth (not milk) is the answer.
  • Freshness matters: Sanshool oxidizes and degrades. Fresh or freshly-ground Sichuan peppercorns produce dramatically more Ma than old, stale ones. Pre-ground powder in old packages may produce little to no true Ma effect.

In reality, Ma tells you nothing about the La level.
