How to Cook Chicken Slices in Hot Pot

CLEANING: Rinse chicken slices under cold water. If marinating (highly recommended for breast meat): toss with 1 tsp cornstarch, 1 tsp Shaoxing wine, pinch of white pepper, and 1 tsp light soy sauce. Let sit 5 minutes. The cornstarch forms a protective coating that prevents protein seizing.

CUTTING: Slice chicken breast or thigh 3–4mm thin across the grain. Thigh is significantly more forgiving — its fat content prevents it from drying out. For breast, keep slices on the thinner side (2–3mm) to minimize cooking time.
