Beginner's Hot Pot Party 新手火锅派对
Low-spice, maximum fun — a complete setup for first-timers
A beginner-friendly hot pot party using a mild tomato and clear broth combination. Includes the safest ingredients to start with, a simple dipping sauce, and a step-by-step setup guide so first-timers feel confident from the moment they sit down.
Broth Ingredients
- 1 packet tomato hot pot base (番茄锅底) OR: 400g ripe tomatoes, roasted + 2 tbsp tomato paste
- 1.2 L water or light chicken/vegetable stock
- 2cm ginger, sliced
- 1 tbsp soy sauce
- 1 tsp sugar
- Salt to taste
Dipping Sauce
- 2 tbsp sesame paste, thinned with warm water
- 1 tsp soy sauce
- ½ tsp sesame oil
- 1 tbsp scallion
- 1 tsp garlic (optional for beginners)
At-Table Ingredients
Proteins (all beginner-friendly)
- 200g thinly sliced beef ribeye (肥牛) — the safest hot pot protein
- 200g large shrimp, deveined
- 100g fish balls
- 100g beef meatballs
Vegetables
- 150g napa cabbage
- 100g enoki mushrooms
- 100g corn, cut into 3cm rounds
- 100g potato slices
- 80g spinach
Tofu
- 150g silken or firm tofu, cubed
- 100g frozen tofu, thawed
Noodles
- 100g glass noodles, soaked 15 min
Instructions

Set up the table first
Arrange all ingredients on plates before heating the broth. Assign each person chopsticks, a strainer basket or slotted spoon, and a dipping sauce bowl. Put the sauce ingredients out so everyone can mix their own.

Prepare the broth
Dissolve tomato hot pot base in hot water per packet instructions. Add ginger, soy sauce and sugar. Bring to a simmer. Taste — adjust salt. The broth should taste slightly mild at first; it concentrates as you cook.

Start with the slow-cook items
Add corn rounds first (8–10 min). Then potato slices (5–7 min). These go in before the broth is fully boiling — they help develop flavour in the broth.

Cook proteins as you eat
Beef slices: 10–20 seconds until no pink. Shrimp: 1–2 min until pink and curled. Fish balls and meatballs: 3–5 min until floating. Do not batch-cook everything — add a few pieces at a time.

Add vegetables mid-session
Napa cabbage: 1–2 min. Enoki: 1 min. Spinach: 30 seconds. Tofu: 3–4 min. These cook quickly and can go in any time.

Add noodles at the end
Add pre-soaked glass noodles in the last 10 min of the meal. They cook in 60–90 seconds. Eat immediately — glass noodles become soft if left too long.

Beef slices: USDA 145°F/63°C — thin slices reach this in seconds at rolling boil
Shrimp: FDA 145°F/63°C — cook until fully pink, no translucent centre
Do not re-use raw meat utensils in the communal pot — each person should use personal chopsticks only for eating, not for placing raw ingredients
💡 Tips
- The first 10 minutes are setup — don't rush. Get everyone comfortable with the process before you start cooking.
- Order the cooking so slow items (corn, potato) go in first, proteins and leafy greens last
- Keep a jug of hot water ready — add it when the broth reduces by 20%
- Tomato broth gets sweeter and more concentrated as the meal goes on — add a splash of water if it becomes too intense
