How to Cook Fresh Shrimp in Hot Pot

⏱ 2–3 minutes

CLEANING: If using fresh whole shrimp: rinse under cold water, peel if desired (shell-on is traditional and gives better flavor), and devein by making a shallow cut along the back and removing the dark digestive tract. Pat dry. If using frozen: thaw in cold water 15 minutes.

CUTTING: Leave whole. Scoring the back where you devein is sufficient preparation. Some cooks make a shallow cut on the belly side to help the shrimp lay flat.

HOW TO COOK: Add to simmering or gently boiling broth. 2–3 minutes for medium shrimp; up to 4 minutes for large tiger prawns.
