What Is Silken Tofu?

Silken tofu (soft or tender tofu) has such a delicate, custardy texture that it barely holds its shape when moved. In hot pot, it is gently lowered into the broth in large cubes and left to float, absorbing flavors while its exterior warms to a silky smoothness. The contrast of hot, ultra-soft tofu against a spicy mala broth is a classic Sichuan hot pot pleasure. Handle with care — a heavy hand will break it into pieces.

How to Cook Silken Tofu in Hot Pot

⏱ 2–3 minutes

CLEANING: Drain from packaging water. Handle extremely gently — silken tofu breaks at the slightest pressure. Do not rinse.

CUTTING: Use a sharp knife or bench scraper. Cut into 3–4cm cubes with one smooth motion per cut. Avoid sawing back and forth. Some cooks cut directly in the package to minimize handling.

HOW TO COOK: Use a wide ladle or flat spatula to LOWER cubes gently into the broth — never drop. Keep broth at a gentle simmer (small bubbles) rather than a rolling boil to prevent breakage.

DONENESS CUE: The outer surface becomes slightly silkier and the cube holds shape but jiggles when the pot moves. The interior will be uniformly heated in 2–3 minutes. Use a ladle to scoop out — never use chopsticks which will pierce and break it.

PRO TIP: Let silken tofu rest in your dipping sauce bowl for 30 seconds before eating. It holds heat extremely well and will still be scalding-hot inside. The contrast of cool sauce on a hot silken cube is the ideal way to eat it.
