How to Cook Frozen Tofu in Hot Pot
CLEANING: If making yourself: freeze firm tofu overnight, then thaw completely in the refrigerator (8–12 hours). Do NOT microwave to thaw — it collapses the pore structure you worked to create. After thawing, squeeze GENTLY over a sink to remove excess water. This squeeze-out step creates even more porosity.
CUTTING: Cut into 2–3cm cubes. The spongy structure cuts cleanly with a sharp knife. Avoid compressing the tofu while cutting.
HOW TO COOK: Add to broth early in the session — it needs 5–10 minutes minimum, longer is better.
DONENESS CUE: Heated through when the center feels warm and the cube has absorbed visible broth (it will feel heavier and slightly translucent at the surface). Press gently — a fully cooked frozen tofu cube will express a small amount of broth back.
