How to Cook Lotus Root in Hot Pot

CLEANING: Peel the outer brown skin with a vegetable peeler. The interior is white with the distinctive hollow tube structure visible in cross-section. Rinse after peeling.

CUTTING: Cut crosswise into 3–4mm thick rounds. After cutting, submerge immediately in a bowl of cold water with 1 tablespoon of white vinegar — lotus root oxidizes and browns within minutes of cutting. Drain just before cooking.

HOW TO COOK: Drain lotus root slices and add to boiling broth. Cook 4–6 minutes for crunchy; 8–10 minutes for softer, more starchy.
