How to Cook Shiitake Mushrooms in Hot Pot

CLEANING: Wipe caps with a damp cloth or paper towel — do not soak in water as they absorb moisture readily. Trim the tough stem base (the very bottom 5mm) with a paring knife.

CUTTING: Score the cap with a crosshatch pattern using a paring knife — this both looks decorative and speeds cooking by increasing surface area. Cut depth: halfway through the cap. Alternatively, slice caps 5mm thick for faster cooking.

HOW TO COOK: Add whole caps or slices to broth. Add caps (with stems) early in the session to help flavor the broth itself.
